RECIPE // PUMPKIN CHAI CHOCOLATE CHIP COOKIES

Feeling that nip in the air makes me positively giddy. Red Starbucks cup make my heart beat a little faster. Dreams of fireplaces, snuggly scarves, and warm blankets are on constant rotation in my mind. And pumpkins. Oh pumpkins. Gourds galore. Pumpkin lattes, pumpkin pie, pumpkin everything. Can you tell I love pumpkin? To commemorate the first days of fall, I made pumpkin chocolate chip cookies, and spiced it up with chai notes. These cookies are meant to be more cake-like, and not thin, chewy cookies.

PUMPKIN CHAI CHOCOLATE CHIP COOKIES

Ingredients:
– 1 cup canned pumpkin
– 1 cup sugar
– 1/2 cup melted butter
– 1 egg
– 1 cup flour
– 2 tsp baking powder
– 2 tsp ground cinnamon
– 2 tsp pumpkin pie spice
– 1 tsp cardamom
– 1/2 tsp salt
– 1/2 tsp baking soda
– 1 tsp milk
– 1 tb vanilla
– 2 cups chocolate chip

Combine and mix pumpkin, sugar, butter, vanilla, and egg in a large bowl. In a separate bowl, stir the flour, baking powder, cinnamon, salt, pumpkin pie spice, and cardamom. Dissolve baking soda in milk, then add to the flour mixture. Then, add the flour mixture into the pumpkin, making sure to mix completely. Finally, add in the chocolate chips. Bake at 350 degrees F for 20 minutes, or until the edges are slightly browned.
