Video Recipe: Baked Avocado Eggs

We just couldn’t stay away from these delicious baked avocado eggs, we had to recreate our previous recipe to bring you this quick video. In less than 30 mintues, you can cook up a storm for your next brunch party by popping these egg filled avocados in the oven with an array of toppings for each guest to choose from. Try serving them with bacon bits, bread crumbs, shredded cheese, tabasco, or whatever else you like!


  • 2 medium to large avocadoes
  • 4 eggs
  • finishing salt
  • freshly cracked pepper
  • red pepper flakes

1. Pre-heat oven to 375 degrees F
2. Cut the avocados in half, remove the seed
3. Scoop out a bit of the avocado to make room for the egg
4. Bake for 15-18 mintues, or until the egg whites look opaque and the yolk is still runny
5. Garnish the baked avocado eggs with salt, black pepper, red pepper
