Avocado Baked Egg

So easy and healthy!

Ingredients

  • 2 avocados medium to large
  • 4 eggs
  • finishing salt
  • freshly ground black pepper
  • red chili pepper flakes

Instructions

  1. Preheat your oven to 375 degrees F.

  2. Cut the avocados in half and remove the seed. Scoop out a bit of the inside so that the hole is big enough to fit the eggs. Lay them, hole facing up, on a lined tray.*

  3. Crack the eggs gently and drop one egg in each of the avocados.

  4. Sprinkle salt and pepper over each avocado to taste. Finish with the red pepper flakes.

  5. Bake for 15-18 minutes or until the egg white is cooked, but the yolk still slightly runny. You can also bake it at 400 degrees F for about -10 minutes. **

Recipe Notes

* Make sure to get eggs that will sit readily on the tray, or make sure they're flat on the bottom

** I would just keep checking it every few minutes and make sure it’s cooked to your liking.
