RECIPE // BAKED AVOCADO EGGS

Easy, scrumptious, and healthy. I saw it all over Pinterest for ages, and was finally able to give it a go. On Sunday, a few of my dearest friends came over for brunch and K suggested that we make these healthier baked avocado egg recipe to balance the donuts that we were going to make as well. A rather good idea, especially after eating to excess during vacation!

BAKED AVOCADO EGGS RECIPE (printable recipe below!)

Ingredients:

  • 2 medium to large avocadoes
  • 4 eggs
  • finishing salt
  • freshly cracked pepper
  • red pepper flakes

Preheat your oven to 375 degrees F.

Cut the avocados in half and remove the seed. Scoop out a bit of the inside so that the hole is big enough to fit the eggs. Lay them, hole facing up, on a lined tray.

Crack the eggs gently and drop one egg in each of the avocados.

Sprinkle salt and pepper over each avocado to taste. Finish with the red pepper flakes.

Bake for 15-18 minutes or until the egg white is cooked, but the yolk still slightly runny. You can also bake it at 400 degrees F for about -10 minutes. I would just keep checking it every few minutes and make sure it’s cooked to your liking.

Avocado Baked Egg

Recipe Notes

* Make sure to get eggs that will sit readily on the tray, or make sure they're flat on the bottom

** I would just keep checking it every few minutes and make sure it’s cooked to your liking.

Other toppings that would be fabulous are bacon, cheese, and maybe even some crushed croutons. Drooling just thinking about it!
