Happy Goat Cheese Month! I didn’t even know it was goat cheese month, but somehow I ended up at a goat farm in honor of this esteemed holiday. After our trip (photos to come!), I was struck with inspiration and made these scrumptious mini lemon chevre cheesecake pies. Pro tip! The recipe makes a lot of cheesecake filling, so not only can you make mini pies, you can also make a no-bake graham cracker crust and put it in a mason jar for a spring or summer soirée!
