RECIPE // CHOCOLATE STOUT S’MORES SPREAD

One of my favorite flavor combinations is stout beer and chocolate. Chocolate stout cake, guinness gingerbread, the possibilities are endless. I was recently working on a project that involved making different butters (think cookie butter and pumpkin butter), and it inspired me to make this campfire spread, also known as boozy s’more spread or stout s’more butter. I haven’t decided on a name yet so I’m just going to test all three of ’em out. What do you think?

Ingredients:

  • 1/4 cup crumbled graham crackers
  • 1/2 cup mini marshmallows
  • 1/4 cup stout beer (we used Guinness)
  • 1/4 cup sugar
  • 1 tablespoon cocoa powder
  • 1 tsp vanilla
  • 4 oz dark chocolate, chopped
  • 5 oz butter, softened and cubed

Combine sugar, cocoa powder, salt, and a little bit of water (about 1/8 cup) in a saucepan over medium heat. Stir until the mixture is dissolved, then add marshmallows. Continue to cook until marshmallows are dissolved,  and bring to a simmer. Once it’s at a simmer,  immediately remove from heat. Quickly stir in the chopped chocolate, vanilla, butter, and stout. Let cool. Spread over toast and sprinkle with graham crackers and more marshmallows. Yum!
